Forest venison pâté

30 dekas of venison are ground twice with squeezed buns soaked in 1 milk. Season with salt and pepper, ground thyme and sage. Mix with 2.5 deka gelatin powder, 1 deka cream, 2 tablespoons forest fruit jam. Boil 4-5 tablespoons of forest fruit jam with 2.5 deka gelatin powder and 2-3 tablespoons of red wine. Smooth into a small pâté mold lined with foil. Place dried cranberries in a row and smooth the meaty mass over it. Wrap it around with aluminum foil. Place in a pan half filled with water and steam in the oven at 150°C for 40 minutes. Squeeze and let cool. Sliced ??and served with forest fruit jam diluted with brandy.
