**We have replaced part of the sugar in this product with stevia plant extract (steviol glycosides). This allows us to make fruity, sweet jams and jellies that contain 40% fewer calories than traditional 1:1 fruit-to-sugar preparations.
What is stevia?
Stevia is a herb and spice native to South America and is known for its sweet leaves. Its intense sweetening properties have been known there for centuries. Steviol glycosides extracted from stevia leaves can be used as sweeteners in certain foods. These plant-derived steviol glycosides have a much stronger sweetening effect than sugar and contain virtually no calories.

Preparation and use
Tips:
• To check the consistency of the jam, it is worth putting a tablespoon or two of the still hot jam on a plate and then letting it cool for a few minutes. If you want a jam with a firmer consistency, mix 5 g of Dr. Oetker Citric Acid into the hot jam and then pour it into jars immediately.
• When canning peaches, add 1 sachet of Dr. Oetker Jam Fix 3:1 to the fruit-canning sugar mixture before cooking.
• Store the finished jam in a dry, cool place, and the opened jar in the refrigerator.

Dosage:
1000 g fruit (prepared), 1 sachet of Canning Sugar with Stevia.
Preparation:
1. To make jam, cut the cleaned, measured fruit into pieces as needed, then mash it all together. To make jam, cut half of the cleaned, measured fruit into small pieces and mash the other half.
2. Pour the prepared fruit and canning sugar into a saucepan and bring to a boil over high heat, stirring constantly. Once boiling, let the jam or marmalade boil for another 3 minutes, stirring constantly, then remove from the heat. If necessary, remove the foam from the top.
3. Immediately fill the prepared jars to the brim, seal tightly and turn upside down for about 5 minutes.
